Carrigaline Farmhouse Cheese
Award-winning Carrigaline Farmhouse Cheese is traditionally handmade by Ann & Pat O’Farrell in County Cork, Ireland using rich Friesian pasteurized cow’s milk with no artificial additives or preservatives of any kind. Carrigaline has a firm, supple texture with round or oval gas holes. Its delicate flavour becomes piquant with age and each wheel is coated with wax to prevent dehydration. Carrigaline is most flavorful at 12 weeks or older, but the younger version also makes a lovely, mild cheese. Made with vegetable rennet, Carrigaline is suitable for vegetarians.
