White Stilton with Apricots is packed with chucks of apricots. When dried, the exotic round flavor of the apricots intensifies and gives the young cheese a freshly-picked taste. It is one of our most popular blended cheeses.
Apricot Stilton is wonderful as a table cheese or gently melted. It can even be crumbled over salads for an off-beat “signature” dish. At tea time try Apricot Stilton on warm buttered scones with apricot white tea, or even a glass of sparkling Prosecco for a refreshing dessert.
Coombe Castle recommends Apricot Stilton in a “Rabbit/Rarebit Soufflé”—a blend of crumbled White Stilton, Parmesan, butter, cream, paprika, mustard powder, and black pepper—all whisked up with egg. Spoon the fluffy mixture on top of toast and grill it for a golden brown cheese delight with surprising notes of fruit.
