Believed to be invented in 15th century Somerset, England near Cheddar Gorge, Cheddar was favored by Queen Elizabeth the 1st and a much sought-after gastronomic delight of the court– as one courtier put it cheddars are “bespoken before they are made”. Cheddar quickly became part of the staple diet; hunks were eaten with bread and strong ale.

The recipe was later taken to the USA, Canada, New Zealand, Australia- anywhere the English emigrated. Even Ben Gunn, a pirate in Robert Louis Stevenson’s Treasure Island dreamt of “cheddar cheese-toaster mostly”.

Great Cheddars are made throughout the UK, but only cheddar produced in the English counties of Somerset, Devon and Dorset may be given the EU Protected Designation of Origin name “West country Farmhouse Cheddar.”
