Prior to modern technology, Scotland's northern location limited cheese production to the warmer months, which is why most traditional Scottish cheeses are hard – having been matured through the winter.

Today Scotland boasts a wonderful resurgence of cheesemakers taking advantage of their unique geography and climate that is well suited for crafting cheese. Cheddar is, by far, the most popular Scottish cheese, accounting for 70-80% of total cheese output.

A little know fact- in 1955, Scotland was the first country to introduce rindless cheese.
