  • Apricot White Stilton for August

    A favorite coupling of flavors in the States, White Stilton with Apricots marries the tangy freshness of young English White Stilton cheese with heaps of chopped Apricots.  Already known as a perfect topper crumbled in salads, here are a few other treats prepared by the Coombe Castle Home Gourmands:

    Samantha used the unique taste to fill mini-turnovers in the anyone-can-do recipe below:

    Ingredients:

    1 pkg puff pastry (17.3oz)
    Crumbled White Stilton with Apricots
    2-3 T brown or white sugar (extra for sprinkling)
    Egg wash (1 egg + 1 T water)

    Directions:

    (Serves 8 – 10)

    Preheat oven to 400o F.  Roll out 1 sheet of defrosted (fully so it won’t split) puff pastry.  Cut with approximately 3″ round cookie cutter (or larger).  Top each circle with the desired amount of crumbled cheese and sugar (don’t over-fill).

    Brush edges with egg wash, fold into half moons, press to seal and place on baking mat or parchment paper lined baking sheet.  Brush with egg wash.  Sprinkle with sugar.

    Bake 8 – 10 minutes until puffed and golden brown.

    Apricot White Stilton Mini Turnovers

    Melissa wanted to elevate a usual breakfast into something more elegant and interesting.  She found simply sprinkling White Stilton with Apricots over a waffle did just that.  Since the cheese is not overly-sweet, adding maple syrup completed the dish.
